Cabbage Stew



Time preparation


- 1 cabbage
- 100 gr of lard
- 2 carrots
- 1 onion
- 200gr of beef
- flour
- 1 glass of red wine
- 1 glass of brandy
- broth
- 1 bay leaf
- parsley
- salt and pepper

The cabbages, ones without hard spines, are cooked in boiling water. They are then removed from the fire and compressed between two plates or on a cutting board under a weight. The next day, they are made into large pieces on a bed of lard, carrots and onions, and stewed slowly and lightly for an hour. In the meantime, a nice piece of floured beef is browned separately with a mixture of wine, brandy and a little broth. When it is nice and red, cut it into pieces and add the lard, cooked vegetables, a bay leaf, parsley, salt and pepper, and then put it in the oven for 3 hours or on a grill that will completely surround the pot.
