INGREDIENTS:

- 55% wheat flour
- 15 % white corn
- 10% rye
- yeast
- salt

 
 


The pane misto is packed with 55 percent wheat flour, 15 percent white corn flour and 10 percent rye. Obviously the yeast is prepared the day before with the salt and flour added afterwards. After being mixed for 5-10 minutes in the machine you see here, it is left to rest for about forty minutes and is then cut into small pieces, and put into these containers to give it that classic rounded shape. Following this cuts it. It is then left to rise for about 50-60 minutes. This is the last stage of baking the pane misto. Prior to baking, the various loaves are marked the way as shown.
